Researcher
Ana Fernandes has a PhD in Chemistry (FCUP), with a thesis focused on the interaction between flavylium compounds and polysaccharides (2014). She is currently a Researcher of LAQV-REQUIMTE, working on the nanostructuration of anthocyanins using polysaccharides as building blocks. AF has currently 40 publications in peer review journals, in relevant food science journals. AF presented several poster communications and oral presentations at International and National meetings. She has performed peer review evaluations for International journals and supervised several BSc students. During her research she worked with several Industries.
