Pilar Gonçalves graduated in Chemical Engineering (University of Porto, Faculty of Engineering (FEUP); 1971). PhD in Food Science (University of Clermont II, France; 1984). Since 1993, was Associate Professor at FEUP and, from 2001, member of REQUIMTE-LAQV, coordinating the Food and Environmental Technologies Research Group.
Her research interests include (i) Rheology and microstructure of biopolymer (protein, polysaccharide) single and mixed systems, (ii) Novel textures in food systems (iii) Preparation and characterization of biodegradable films and coatings from low value national resources, (iv) Extraction of biopolymers from marine algae and agricultural wastes using environmentally friendly techniques.
