The network AlProSos - Red de Alimentos ricos en Proteínas regionales Sostenibles (2025-2028) composed by 232 researchers from 14 countries, has the objective to consolidate an Ibero-American network for the production, selection, purification, and functionalization of alternative proteins obtained from regional sources for the development of sustainable and high-quality nutritional food prototypes. The Network is justified due to the increase in protein demand, making it necessary to identify and characterize new protein sources, considering economic, health, and sustainability factors, and enhancing the value of regional raw materials. New ideas and solutions adapted to the specificities of each region will be developed.
